Maple Chia Oatcakes

**this is the full recipe for tiny lab, so please halve it if you’re nervous!

  • 2.5 c. Organic All Purpose Flour 

  • 1.5 c. Old Fashioned Oats

  • 1/2 c. Chia or Flax Seeds**

  • 2 t Cinnamon

  • 2 t Salt

  • 1 c. Coconut Oil

  • ½-1 c. Maple Syrup (depending on taste)

Preheat oven to 350 F.  Mix everything in a bowl, scoop 1T amounts on a greased pan and bake 10-15 minutes, or until golden brown on the bottom.  Once cooled, keep in an airtight container for one week, or freeze cookies up to two months.
